Yummie Buttercake recipe

Please read first!!
 serves twelve

INGREDIENTS
200g butter, softened
2 1/4 cups (300g) of gluten-free self raising flour
1 cup (125mL) milk
2 eggs
2 egg whites
3 x 10g packets gluten-free edible sugar roses

FROSTING
1 cup (220g) caster sugar
1/2 cup (125mL) water
2 egg whites
green, white and red food colouring

1. Preheat oven to 180 degrees Celsius. Grease and line deep 25cm-heart cake pan.
2.Beat butter in medium bowl with electric mixer until changed to a paler colour. Sift flour and 1/4 cup of the sugar together. Beat flour mixture and milk into the butter, in two batches only until combined.
3. Beat eggs and egg whites in a small bowl with electric mixer until thick and creamy. Gradually add remaining sugar, one tablespoon at a time, beating until sugar dissolves between additions. Gradually pour egg mix into flour mixture with motor operating at low speed, only until combined.
4.Spread mixture into pan; bake about 50 mins. Stand cake 10 mins; turn, top side up, onto wire rack to cool.

FLUFFY FROSTING
Stir sugar and water in small saucepan over heat, without boiling, until sugar is dissolved. Boil, uncovered, without stirring about 5mins, or until syrup reaches 116 degrees Celsius on a candy thermometer. Syrup should be thick but not coloured. Remove from heat; allow bubbles to subside. Beat egg whites in small bowl with electric mixer until soft peaks form. While mixer is operating, add hot syrup in thin stream; beat on high speed for about 10mins or until mixture is thick and cool. Reserve 2 tablespoons of the frosting in a small bowl and tint it green. Tint icing red and spread on the cake evenly. Put the green icing into a small frosting bag; pipe leaves onto cake. Tint four table spoons of icing and place into small frosting bag. Make flower shapes!! And Bobs your uncle!

* 2 tablespoons multicoloured sprinkles

What to do:
1. Count out 24 meringues.

2. Place marshmallows in a small microwave-safe heatproof bowl. Microwave marshmallows on high (100 per cent) for 20 seconds or until marshmallows double in size and soften. Stir until smooth.

3. Spoon 1 heaped teaspoon of melted marshmallow onto a meringue and sandwich together with another.

4. Place sprinkles on a small plate. Gently roll the kisses in sprinkles until the marshmallow centre is coated. Place the kisses on a tray lined with baking paper for about 30 minutes to allow the marshmallow to set.

Jiggly jelly custard tarts

* 12 sweet pastry cases
* 1 1/2 cups smooth and creamy vanilla custard
* 85g packet raspberry flavoured jelly crystals
* Strawberries, to decorate

What to do:

1. Place custard in a small saucepan. Stir over medium heat until hot, not boiling. Add jelly crystals and stir over a low heat for about three minutes or until jelly crystals have dissolved. Remove from the heat and set aside to cool for 20 minutes.

2. Pour custard filling into a pouring jug, and pour into pastry cases.

3. Refrigerate overnight or until filling has set. Just before serving, arrange sliced strawberries prettily over the top of the tarts!

Chicken and cucumber sandwiches

What you need:

*
10 slices white sandwich bread
* 1 large Lebanese cucumber
* 1/3 cup mayonnaise
* 100g shaved cooked chicken breast
* 1/2 bunch chives, finely chopped

What to do:

1. Using a vegetable peeler, cut thin strips of cucumber by running a peeler from one end of the cucumber to the other, until you come to the seeds in the middle.

2. Spread mayonnaise over one side of each slice of bread. Top with cucumber strips and chicken. Top with remaining slices of bread.

3. Get mum or dad to help you trim the crusts from the sandwiches using a serrated knife. Cut each sandwich into three fingers.

4. Spread a small amount of extra mayonnaise on one long side of each finger and coat in chives.

Nick Jonas goes solo send this to a friend

Little Jonas goes it alone!

Nick Jonas has been working on his debut solo album - 'Nick Jonas and The Administration' - for the past six months and it will be released next year.

His mother Denise confirmed: "Nick is working on a solo act - it's called 'Nick Jonas and The Administration'. Shhh! He's at the photo shoot for the album cover right now."

However, The Jonas Brothers insist they are not splitting and have plans to make more music together.

They wrote on their blog: "The Jonas Brothers are NOT breaking up! We are ALL excited about this project AND what we are doing TOGETHER! We plan to make music together for as long as we can."

The trio are also planning a world tour for next year and industry insiders believe Nick branching out will benefit their future.
One said: "This project would only expand the Jonas brand. The music is amazing and really shows off Nick's vocal range."

Phew! We were worried for a moment that Jo Bro were no more! What do you think about Nick going solo? Send an email to tgmailbag@pacificmags.com.au. Don't forget your name and age!

Pink's kangaroo nightmares send this to a friend

Pink has another encounter with a hopping animal!

Superstar singer Pink has gone hopping mad in her dreams... She's been having nightmares about kangaroos!

The 'So What' singer dreamt a pair of the bouncing Aussie animals destroyed the home she shares with her husband.

She said: "I dreamt the other night that I smuggled two kangaroos home from Australia and they trashed my house and my dog Bailey was terrified. Bad idea!"

Although kangaroos are tormenting Pink in her dreams, another hopping animal attacked her in real life.

The singer wasn't happy when a frog jumped onto her face while she was on a recent bike trip in Australia.

We wouldn't blame Pink for thinking Aussie animals are kanga-rude! Tell us what you think about the news by sending an email to tgmailbag@pacificmags.com.au. Don't forget your name and age!

Totally Jessie goes to Paris! send this to a friend

Dear Diary,

Bonjour! You will not believe where I have been this past week. Paris!!! Remember how I said I overheard Cass's mum telling my mum she was going on a holiday with the family? Well I missed the part where she asked my mum if I was allowed to join them.

My mum was a bit unsure at first but she trusts Cass's mum because they've been friends for ages now. I wish I had more time to prepare myself but I only found out a few days before leaving. I needed help packing but I didn't want mum to do it because she always packs ugly clothes that I never wear. Cotton helped me instead. Half the clothes I was looking for he was sitting on.

Mum and dad took me to tge airport to meet Cass. Mum was crying the whole way. It was so embarrassing because when we met up with the others, mum had red eyes. I've never been overseas without my parents before, but I wasn't nervous. The flight was so boring after i watched all the movies available. Cass fell asleep so I had no-one to talk to! I was really close to waking up Cass i was that bored. Luckily mum made me take a book. She kept saying how it would come in handy if i got bored.

Our hotel in Paris was absolutely beautiful! The foyer had marble floors and massive lounges that looked like they belonged in a Queen's castle. I put my feet up on the lounge for one second and the concierge gave me a dirty look. Whoops! Our first stop was the Eiffel Tower. It looks just like all the pictures I've seen, but better! To get to the top we had to stand in a line for ages but it was totally worth it. It was so pretty.

Then we went to a cafe to fill our tummies. Cass's dad would not stop whining about how hungry he was. He was acting like a big kid. When we got the menus we couldn't read anything so the waiter made some suggestions.

"Try the Escargot, the tourists love it!" He rambled off all this other stuff but I couldn't understand him even when he spoke in English because his accent was so strong. I told Cass's mum to order me anything and Cass copied. When we got our food, I had no idea what I was looking at, but it looked disgusting. Cass's mum realised she must've ordered frogs' legs and snails which are famous in France.

We went to the Louvre museum and I was pumped to see the Mona Lisa because I'd heard so much about it. Turns out it's not as big as I had imagined. Cass's parents wanted to keep exploring the museum but Cass and I were getting sick of it. We couldn't have seen the whole place anyway because it's so big it would take days to look at everything.

We also went to Notre Dame and it made me feel like I was in that movie, The Hunchback of Notre Dame.

We even visited the Arc de Triomphe but Cass and I didn't see what all the fuss was about. It's just a big arc, but it honours those who fought for France.

I was having such a great time that I kind of forgot about Catherine who was back at home. I bought a postcard to send back to her. I told her all about the sights we'd seen and said I wished she could have come too.

Jo Bro wedding a family affair! send this to a friend

Brotherly love... Nick and Joe will be by Kev's side!

Kevin Jonas has asked brothers Joe and Nick to be his best men.

The Jonas Brothers singer – who got engaged to girlfriend Danielle Deleasa in July – couldn’t choose between his siblings so decided to have them both by his side on his big day.

Danielle’s two sisters will both be maids of honour.

When Kevin spoke about the proposal, he said: "She said yes, yes, yes like 500 times super fast in a row."

Danielle, who met Kevin in May 2007, added: "It still feels like a dream."

The 21-year-old Jo Bro admitted he was nervous about popping the question.

He said: "It was tough performing last night, knowing that I was going to ask the biggest question in my life to the most amazing girl in the world."

Joe and Nick spoke of their joy at the engagement, saying on their Twitter page: "Congrats big brother... Dani welcome to the family, we can't wait to have you join us on the road!"

Aww, what a sweet couple they will make. Congrats Kevin and Danielle!!
